Meet Chef Jimmy Lee

Chef Jimmy Lee is the owner and lead chef of Aonami Sushi, Chico’s first sustainable sushi bar. His approach to sushi is rooted in respect for the ocean and a belief that great food should never come at the cost of the environment.

After learning about the impact of overfishing and declining marine ecosystems, Chef Lee committed his career to sustainable sushi. By strictly following the Monterey Bay Aquarium’s Seafood Watch program, he ensures every ingredient is responsibly sourced.

At Aonami Sushi, Chef Lee crafts bold, flavorful dishes guided by tradition, intention, and a commitment to protecting the oceans for future generations.
